Pain De Mie

Adapted from King Arthur recipe to fit 13" USA Pullman tin

Ingredients:
2/3 cup milk
1 cup lukewarm water
85g butter softened
2 1/4 teaspoon salt
3 tablespoon sugar
35g or 1/4 cup milk powder
35g or 1/4 cup potato flour
200g white flour
370g bread flour
2 teaspoon yeast

Method :
Combined all ingredients in a mixer and knead till dough is soft and shiny. Took 10-15 minutes on my KA at speed 4

Oil a bowl and let dough rise to double. Cover with cling wrap

Deflate dough and roll into log the same length as bread tin. Cover with cling wrap and allow second rise. 

Once it reaches 1inch from the top, cover and preheat oven to 175C. Wait till 10 minutes then bake with lid on for 25 minutes.

Remove lid and return to oven for another 10 minutes.

Remove bread from tin and let it cool on wire rack
